Concept

Non-alcoholic drinks
made with Mt. Yotei water
and Hokkaido ingredients.

Delicious from Hokkaido Co., Ltd. makes non-alcoholic drinks that restaurants and hotels can pair with food — centered on YOTEISTOCK, natural spring water from the foot of Mt. Yotei, and HAKKOGINGER, a ginger beer brewed with Hokkaido ingredients. We are based in Kutchan, Hokkaido, at the foot of Mt. Yotei.

Our founder, Shinichi Maeda, spent many years as an executive chef in Australia and Niseko. At his Niseko restaurant, with Mt. Yotei right outside the window, he found himself serving imported mineral water and ordinary soft drinks. Hokkaido cuisine deserves Hokkaido water and drinks — that conviction is where our work began.

We hold ourselves to one standard: would a top chef want to use it in their own restaurant? Not just in flavor, but in design, hygiene and quality control. We only deliver products that meet it.

Ingredients

The water and harvest of Hokkaido

As much as possible, our ingredients come from Hokkaido — from local producers we know — and we let them speak for themselves.

MT. YOTEI WATER

Mt. Yotei spring water

Very soft water (hardness 18.5mg/L) drawn at the foot of Mt. Yotei in Niseko. Its smooth mouthfeel never overpowers delicate cuisine.

HOKKAIDO GINGER

Hokkaido ginger

Ginger and lemon are used fresh, never dried. In new-ginger season, we capture the aroma of the fresh harvest in syrups and gari.

FARM FRUITS

Fruit from Hokkaido farms

Apples, grapes and ume from Niki, haskap from Chitose, strawberries from Toyoura, aronia from Otaki.

TOKACHI MOLASSES

Tokachi molasses

Mineral-rich Tokachi molasses, slowly fermented with Ezo mountain-cherry yeast.

Our brands

Only what
top chefs choose.

Our founder, Shinichi Maeda, is a chef who has spent more than 20 years in restaurant kitchens in Japan and abroad. He selects ingredients with a chef's eye and makes what chefs want to use: Mt. Yotei spring water, ginger beer brewed from Hokkaido ingredients, and kombucha made to pair with food. Every one is made to sit beside a top chef's cooking.

Craft

Every step that looks like a detour
has a reason.

We ferment ginger and fruit with their skins. We draw aroma from lemon peel. We prepare each ingredient in the way that suits it best. These extra steps may look inefficient, but they bring out the full potential of every ingredient. We value careful handwork at every step.

01

Fresh ginger and lemon,
never dried.

The ginger and lemon in HAKKOGINGER go in fresh, never dried. That is where its layered aroma of ginger, the kick of chili and the freshness of lemon come from.

02

Fruit rested
with skins and seeds.

Apples, Niagara grapes and ripe ume are cold-fermented for a week with skins and seeds — a winemaking technique that draws out aroma and depth no juice can match.

03

Mt. Yotei water,
never heated.

YOTEISTOCK is bottled without heat, using filter sterilization and aseptic filling — to keep the smooth mouthfeel of this very soft water (18.5mg/L) just as it is.

Philosophy — DFH MVV 2026
MISSION

Creating the world's standard,
from Hokkaido.

Turning resources that are already world-class into a new global standard.

VISION

A brand Japan will still be
proud of in 100 years.

Growing together with people, nature and our community, and passing Japan's pride on to the next generation.

01
JOY

Create work that excites us.

We build the work we want to do, together with our team. We find ways to make everyday work interesting — and share that joy with our customers.

02
CHALLENGE

Back the people who take on challenges.

When we see potential, we take the first step, even without precedent. When a teammate steps forward, we lend a hand. We bring together what each challenge teaches us and use it for the next step.

03
CARE

Value the lives and livelihoods of everyone we work with.

Producers who can keep growing with peace of mind. Customers who can eat and drink with confidence. Teammates who can work while caring for their body and mind. Each of these is the foundation of every decision we make.

04
STEWARDSHIP

Pass this land's gifts on to the next generation.

We protect our water source and keep finding ways to use every ingredient fully. We earn a proper profit while protecting flavor and quality, so that good craftsmanship stays work the next generation can continue.

05
PROSPERITY

Bring Hokkaido's hidden value to the world.

The ingredients of this land, the skills of its people, its rich nature. We find the value hidden there and shape it into something that reaches the world — creating new work locally and enriching Japan's economy from Hokkaido.

REPRESENTATIVE DIRECTOR / CHEF

Welcoming guests from all over the world at An Dining in Niseko, I came to want to draw out every bit of flavor in a dish — and to create dining experiences that are unforgettable, right down to the drink.

Drinks that make the most of Hokkaido's water and ingredients, and truly open up when enjoyed alongside food. That conviction gave rise to HAKKOGINGER and YOTEISTOCK.
